Lydia Ray’s Peach-Brown
Sugar Baked Beans
A Fourth of July side dish from the Ray family table. Sweet, smoky, and just a little sharp around the edges.
Ingredients
2 cans pork and beans or baked beans
4 slices bacon, chopped
1 small onion, diced
1/2 cup diced peaches, fresh or canned and drained
1/4 cup brown sugar
2 tablespoons ketchup
1 tablespoon yellow mustard
1 tablespoon apple cider vinegar
1/2 teaspoon smoked paprika
Black pepper, to taste
Directions
Cook the bacon in a skillet until it starts to crisp. Add the onion and cook until soft. In a baking dish, stir together the beans, peaches, brown sugar, ketchup, mustard, vinegar, smoked paprika, pepper, bacon, and onion. Bake at 350°F for 35 to 40 minutes, until bubbling around the edges.
